Gluten-Free Pizza in Salt Lake City

Our own gluten-free dough, baked in a second wood-fired oven used for gluten-free only. All seven pizzas, plus fifteen more dishes, fifteen minutes up Emigration Canyon from downtown Salt Lake City.

Most kitchens that offer gluten-free pizza in Salt Lake City bake it in the same oven as everything else. The dough is gluten-free. The deck it lands on is not. For anyone with celiac disease, that is the difference between a menu note and an actual meal.

So we built a second oven. Two copper wood-fired ovens sit side by side off the open kitchen, and the second one is kept for gluten-free pizza only — its own deck, its own peel, its own fire. And the dough that goes into it is ours, mixed here, in this kitchen.

One thing you need to know before you order: our gluten-free dough contains almond flour. That is a tree nut. If you have a nut allergy, the gluten-free pizza is not for you — tell your server and we will point you at the fifteen dishes below that are gluten-free without it.

The Second Oven

One oven for wheat. One oven for gluten-free.

The ovens are the loudest thing in the room and the reason the building smells the way it does. Both run hot enough to blister a Neapolitan crust in about ninety seconds. They are identical — same heat, same char, same leoparded edge — and they are used differently on purpose.

Cross-contact in a pizza kitchen almost always happens in one of three places: the oven floor, the peel, or the flour dust hanging over a shared bench. A dedicated gluten-free oven removes the first two outright. It is an expensive way to say we take this seriously, which is exactly why so few pizzerias do it.

You can watch it happen. The downstairs dining room sits directly off the open pizza kitchen, so your pizza is baked in front of you, in the oven you were told it would be baked in.

The Pizza

There is no shortened gluten-free menu here, and no single sad margherita. Every pizza on the list can be built on our house-made gluten-free dough for $3, and it goes into the second oven.

Making the dough ourselves is the part most kitchens skip. A bought-in crust arrives already baked and you reheat it. Ours is mixed here and fired from raw, in a wood oven, at the same heat as everything else on this list. That is why it comes out with a real crust and a real char instead of a cracker.

The list above is what is gluten-free before anyone touches it. It is not the limit. The kitchen can rebuild a number of other dishes gluten-free on request — the Bison Burger without the bun, for one — and the monthly specials change what is possible from month to month.

So tell your server. Say the word “celiac” when you order and the kitchen is told before a single pan comes out. That one sentence is what turns a menu into a meal you can trust.

Two honest notes. First, we are not a fully gluten-free building — wheat flour is still used on the other side of the kitchen. Second, our gluten-free dough contains almond flour, so it is not an option for a nut allergy.

What we can promise is our own gluten-free dough, a separate oven, a separate peel, and a kitchen that has been told you are coming.

When To Come

Fifteen minutes up the canyon.

Pizza is served at dinner: Monday to Thursday 5:00–9:00pm, Friday and Saturday 4:00–9:00pm, Sunday 4:00–8:00pm. Brunch runs Saturday and Sunday, 10:00am–2:00pm. Reservations are highly recommended on weekends.

When the season allows, the creekside lower patio and the treehouse-like upper patio are open — same two ovens, no walls.
